The beef brisket is first braised and then deep-fried. The final product is then dipped in a sassy curry sauce. The combination of beefy flavors, the crispness of the fried dough as well as the mild pungency and moisturizing ability of the curry sauce bring the dish to a strangely delectable height. The chicken is treated by a combination of frying, roasting, and smoking (with tea leaves) to concentrate the flavors of the chicken while simultaneously infusing from the tea leaves a subtle sweetness.

1 star to both the beef brisket and the chicken.

Yat Lok has completely changed my opinion about where best to find roast goose in Hong Kong, nevermind Central. Its goose is seriously delicious, with just the right amount of char on the outside, lingering meat juices (but not grease) between the skin and the meat, and outstanding texture (meaning fresh) for the meat.

1 star for the roast goose.

The lamb ribs, cooked in a hot broth with Chinese herbal medicine, packed flavors. The meat got texture but was pleasant to chew on. The lamb "pot stickers" were slightly oily but provided added zest to the meal.

Rating: 1 star to the lamb hotpot.
