Karamiso ramen in miso soup. The noodles were thicker and heftier than
those offered at many other ramen restaurants in Hong Kong, yielding a
more chewy and tangy texture. The miso soup base featured a rich, nutty body
while offering a finish lingered with essence of pork fat and fresh
sesame. The crispy and airy onion salad, standing weightlessly above
the soup, played a lighter, Robin-esque counterpoint to the soup base's heavier
Batman. The only blemish of the evening was the chashu. It was rather
dry and so thinly cut that it almost disintegrated into the hot soup.
